A delightful cucumber dinner featuring ground pork, fresh vegetable accents, and a savory sauce. It's a quick meal that can be enjoyed on any evening, bringing together the crunch of cucumbers and the warmth of stir-fried pork.
Thinly slice your cucumbers and add to a shallow bowl with rice wine vinegar, sugar, and salt. Stir and set aside.
In a small bowl, mix together soy sauce, rice wine vinegar, shaoxing wine, sesame oil, brown sugar, sriracha, and msg (optional). Set aside.
Heat a large fry pan over medium high heat and add oil. Once hot, add green beans with a pinch of salt and cook until slightly charred, about 3 minutes, then remove from pan.
In the same pan, add more oil and add ground pork without touching it for 3-5 minutes until browned. Flip and add green onions, garlic, ginger, and stir with green beans and sauce for 1 minute until slightly thickened.
Serve the pork and green beans over rice with pickled cucumbers and sesame seeds.
